TAH-DAH!!!
Well, it didn't turn out nearly as pretty as the one in the picture but it tasted pretty yummy. I ended up not doing the chocolate and for the sake of $ I used frozen raspberries, blackberries and blueberries (yeah, I kept the blueberries). The mandarin oranges were a last minute choice to give it more color, not sure it really did much for the over-all taste, might leave them off next time. I did a boston cream filling instead of custard, mostly because I'm pregnant and lazy. I also skipped the apricot glaze but think I might do that next time. It needed a little something more. I also think next time I will go for a shortbread cookie crust instead of traditional pie crust.

HOLY AMAZING! That looks awesome! My new baking feat for the week is to make a Strawberry pie... Ross got a little Costco-happy and brought home a HUGE carton of beautiful strawberries that I can't let go to waste. Now I'm thinking my next baking adventure will be a fruit tart. It's beautiful!
OH...MY...GOSH. My mouth is totally watering right now. It's almost too pretty to eat. But I still would, of course. :)
